When Summer turns to Autumn the cozy feelings start no matter the actual temperature outside! And the first thing I want to do is start baking followed by wanting to make a nice pot of soup. I recently sat down and wrote out a list of everything I want to cook and bake just to get me started.

I will be working through this list every Sunday as I prep food for the week, adding to it, and make a post of the week’s meal plan. Here is what I cooked Sunday, October 22:
- Chickpea & Sunflower Seed Salad
- Lentil & Carrot Salad (My Own Recipe, let me know if you are interested and I will post it! )
- Roasted Tomato Soup
- Baguette
- Chocolate Chocolate Chip Cookies
- Passion Fruit Tea
The chickpea salad is one of my favorites and is on constant rotation. The tomato soup recipe was new to me, but I really like it. She also made a video for the recipe where she uses white beans to thicken it and that is what I chose to do, excellent! The bread was tasty and the cookies were my first time trying gluten free and they also were eggless, everyone loved them!
